Follow up to #15721. These PRs have merged now:
Hoodi: eth-clients/hoodi#21
Holesky: eth-clients/holesky#132
Sepolia: eth-clients/sepolia#111
In #15721, we pinned to the unmerged commit of those branches. This PR takes the commit from the main line branch in which those PRs were merged.
This PR also removes the legacy / deprecated eth2-networks dependency. It was not used.
